As an Irish proverb so wisely states; laughter is brightest when food is best. And yet, food also seems to be one of the most controversial topics to delve into.

My sweet tooth is no secret

What is a “healthy diet”?

How many calories is too many?

Stop eating carbs.

Start eating carbs.

Don’t eat fats.

Don’t eat meat.

Don’t eat animal produce.

The list goes on. Every person will have their own opinion on diet, and food, and that’s great. Let them have their opinion. You’ve got to figure out what’s right for you. For years I over-ate, trying to put on weight so I could be in the “right range” for a rower. Thankfully that has all stopped now, and I understand the rhythms, routines, and meals that work well for me. I am not going to share that; I am not a qualified nutritionist, I don’t know you or your history of food, and quite frankly it just doesn’t matter what I do.

What I am here to offer is a different slant on the beautifully manicured instagram meals gracing our social media; I love hearty food. Food with a soul. And food that makes me excited to eat it. Lots of veggies, flavour, sometimes with meat, always with a smile.

I eat vegetables.

I eat rice, pasta, bread, gnocci, potatoes.

I eat eggs and milk and cheese and cream.

I eat meat, but less now than I ever have done before.

I love all things sweet.

And I’ve refound my love for cooking.

But nothing complex or requires too much brain power; I’m good at burning things.

I like cooking to create the maximum taste with minimal ingredients.

I love food that has a party in your mouth every time you eat it.

Anything I share will be meals that I create and eat regularly, with no calorie details and very little quantity details either. I’m a massive advocate of batch cooking, therefore more is better so amounts don’t matter. I also love finding incredible local restaurants and cafes wherever I find myself.

Simple, quick, easy and tasty food that will fuel you, make your mouth happy and your tummy too.
